February 2004 - September 2018

Starting as a bartender, I was promoted first to Head Bartender (July 2005), then Assistant Bar & Wine Shop Manager (April 2007) before accepting my position as Bar Manager in February 2010. I was responsible for all aspects of the day to day running of 2 high quality cocktail bars, with emphasis on:
  • Actively managing and overseeing the daily operation of 2 bars including the food and beverage service
  • Ensuring the highest quality customer service, including cocktail bartending & fine dining wine service
  • Recruitment and applicant selection
  • Drive revenue performance and maximise sales opportunities
  • Rota and holiday planning and management for 18 staff
  • Full stock control and stock taking procedures
  • Agree and implement actions to continuously improve customer satisfaction and experience
  • Conducting staff training and regular appraisals
  • Composition, maintenance and pricing of cocktail and wine lists
  • Liaising with other departments regarding functions & events
